Recipe: Pineapple-Basil Cocktail
Pineapple-Basil Simple Syrup:
2 cups sugar
1 cup pineapple juice
1 cup water
1 cup firmly packed bail leaves
1 cup ice
3/4 cup gin
1 - 12 ounce bottle of chilled club soda
First, make the pineapple-basil syrup. Bring sugar, pineapple juice and water to a boil in a
medium saucepan, stirring just until sugar dissolves. Boil for 2 minutes (no stirring) and remove
from heat. Add basil leaves and steep for 10 minutes.
Add ice to a two quart pitcher. Stir in the pineapple-basil simple syrup, gin and lemon juice.
Add chilled club soda just before serving.
