Spring Thyme Lemonade

Servings: 6 cups

INGREDIENTS

  • 1 cup fresh squeezed lemon juice
  • 4 ½ cup filtered water
  • ¾ cup Thyme Infused Simple Syrup, or more according to taste
  • ice cubes, as needed

Thyme Infused Simple Syrup

  • 1 cup water
  • 1 cup granulated sugar
  • 4 fresh sprigs thyme, preferably lemon thyme

INSTRUCTIONS

Lemonade

  • Stir together lemon juice, water, and thyme simple syrup. Add more syrup depending on taste preference.
  • Refrigerate.
  • Serve chilled with ice.
  • Garnish with a slice of lemon and a sprig of thyme.

Thyme Infused Simple Syrup

  • In a medium sauce pot, combine water, sugar, and thyme.
  • Bring to a boil until sugar has dissolved.
  • Remove from heat.
  • Cover sauce pot and let thyme steep for 8-10 minutes.
  • Remove thyme sprigs and allow simple syrup to cool to room temperature.
  • Transfer to airtight jar and keep chilled in the fridge.

Pineapple-Basil Mocktail

INGREDIENTS

  • 1 cup ice
  • Pineapple-Basil Simple Syrup*
  • 1/4 cup fresh lemon juice
  • 1 (12-oz.) bottle club soda, chilled

Pineapple-Basil Simple Syrup

  • 2 cups sugar
  • 1 cup pineapple juice
  • 1 cup water
  • 1 cup firmly packed basil leaves

INSTRUCTIONS

Mocktail

  • Fill a 2-qt. pitcher with ice.
  • Stir in Pineapple-Basil Simple Syrup and lemon juice.
  • Add chilled club soda just before serving.

Pineapple-Basil Simple Syrup

  • Bring sugar, pineapple juice, and water to a boil in a medium saucepan, stirring just until sugar dissolves.
  • Boil for 2 minutes. (Do not stir.) Remove from heat.
  • Add basil leaves and steep for 10 minutes.
  • Press through a wire-mesh strainer into a bowl, using back of a spoon to squeeze out liquid; discard solids.
  • Cool completely (about 20 minutes).
  • Transfer to a jar; cover and refrigerate up to 3 months.

Grapefruit Rosemary Fizz

INGREDIENTS

  • 4 oz. fresh squeezed grapefruit juice (about 1 grapefruit)
  • 1 sprig of fresh rosemary
  • ½ lemon, juiced
  • 1 cup sparkling water or kombucha
  • 1-3 tsp. honey, to taste

INSTRUCTIONS

  • Mix grapefruit juice, lemon juice, and honey in a glass.
  • Top with sparkling water or kombucha and stir.
  • Add ice, rosemary, and a grapefruit slice for garnish.

Strawberry Lychee "Nojitos"

Servings: 4 12-oz. drinks plus extra fruit

INGREDIENTS

  • 1 can (20 ounces) lychees in syrup, with juice reserved
  • 1 pint strawberries, stemmed
  • 1 bunch fresh mint
  • 2 bottles (20 ounces) club soda, seltzer, or clear carbonated drink such as 7Up

INSTRUCTIONS

  • Place 2 strawberries, 2 lychees, and 3–5 mint leaves in each glass and muddle together until well combined and fragrant.
  • Fill each glass nearly full with soda water.
  • Add 1–2 tablespoons lychee syrup to each glass and adjust sweetness to preference with lychee syrup.
